I recently tasted this appetizer at a party and was surprised by how tasty it was. The preparation may seem unusual, but I recommend everyone to try it at least once.
To make fried cucumbers, you will need:
Pickled cucumbers - 3-5 pieces (about 400g)
Kefir (any fat content) - 100ml
Chicken egg - 1 piece
Wheat flour - 70-100g
Salt - a pinch
Baking powder - 0.5 tsp
Ground black pepper - 1-2 pinches
Italian seasoning (Provencal herbs) - 1 tsp
Refined sunflower oil - enough for frying
Instructions:
Slice the cucumbers into 4-5 mm thick rounds. Place them on a towel, and cover with another towel on top to remove any excess moisture from the surface of the cucumbers.
This is necessary to prevent the batter from being too wet.
Make the batter.
Take a suitable bowl, pour in the kefir, add the egg, salt, pepper, and herbs.
Mix everything with a whisk.
Sift the flour and baking powder into the mixture. Stir with a whisk to break up any lumps.
The batter should be thick enough to coat the cucumbers.
Dip each cucumber slice into the batter, and mix them well.
Heat the oil in a deep pan. Fry the cucumbers over medium heat, flipping them over once, until golden brown on both sides.
Drain the fried cucumbers on paper towels to remove any excess oil.
Serve the fried cucumbers hot, with garlic sauce or mayonnaise. This appetizer is delicious both hot and chilled, and can be enjoyed immediately or stored in the refrigerator for later.
