The classic filling for potato rolls is ground meat, but other fillings have been invented in modern culinary art.
In addition to ground meat, mushrooms and two types of cheese are used.
Thanks to the mushrooms and cheese, the filling will be very juicy and aromatic.
Ingredients:
Potatoes - 1.5 kg
Potato starch - 1 tbsp
Eggs - 2 pieces
Mushrooms - 1 kg
Ground beef - 300 g
Onion - 2 pieces
Toast cheese - 100 g
Mozzarella - 150 g
Breadcrumbs - 100 g
Salt - to taste
Ground black pepper - to taste
Instructions:
First, make the potato dough. Boil the potatoes with the skin until tender. The potatoes should not break apart during cooking, otherwise they will be saturated with liquid inside.
Therefore, do not poke the potatoes with a knife when checking them during cooking.
Cook the potatoes for 20 minutes after the water comes to a boil, add salt. Slightly cool the cooked potatoes, peel them, and mash them into a homogeneous puree.
Crush the eggs into a paste, add the starch, and mix. Knead a smooth dough that won't stick to your hands. Cover the dough with plastic wrap and set it aside.
Then prepare the filling. Peel and dice the onion, place it in a hot greased pan, and fry for 3 minutes until it softens.
Add the ground meat to the onion, continue frying for 7–10 minutes over medium heat, and while stirring constantly, break up large pieces of ground meat into smaller pieces.
Wash and chop the mushrooms, add them to the pan with the ground meat and onions. Fry the mixture, stirring frequently, until the liquid has completely evaporated. Add salt and pepper.
After frying, cool the filling.
Grate the hard cheese on a coarse grater, and cut the mozzarella cheese into small cubes.
Combine the two types of cheese with the fried mixture in one bowl. Add seasoning as needed.
Divide the potato dough into 16 equal pieces, make balls, and flatten each ball into a disc.
Place on a table and sprinkle with flour. Put 1 tablespoon of filling in the center of each disc.
Create elongated cakes. Coat them with breadcrumbs on all sides.
Put a few spoonfuls of oil in a pan, heat it, and place the potato rolls in the pan. Fry over medium heat on both sides.
After frying, dry the rolls with paper towels to remove excess oil. The dish is ready to serve.
