Ingredients:

80 g flaxseed flour

1 tsp baking powder

50 g chopped walnuts or almonds

1 sachet of vanilla-flavored protein drink mix

30 g psyllium

150 g full-fat yogurt (preferably Greek)

4 eggs

6 heaping tbsp xylitol (birch sugar)

1 egg yolk for brushing the stollen

powdered xylitol for dusting

a handful of raisins or 70% dark chocolate (optional)

Instructions:

In a bowl, beat the eggs, add yogurt (which can be combined with cottage cheese or cream cheese), and add birch sugar. Mix everything with a hand mixer.

In another bowl, mix all the dry ingredients: protein powder (which can be replaced with 2 tbsp of protein cream), flaxseed flour, psyllium, baking powder, nuts or raisins, and pieces of chocolate.

Then thoroughly mix both mixtures and let the dough rest for a while.

On a baking sheet lined with parchment paper, shape the dough into a stollen with wet hands.

If the dough is too thin, add a little psyllium. It should hold its shape and not spread out.

Brush the stollen with beaten egg yolk and bake in a preheated oven at 160 °C for about 1 hour.

Once baked, sprinkle the still warm stollen with powdered birch sugar and let it cool.
